Sunday 14th of february was valentines day and mother’s day. My mother is also on a low carb diet, so I made this cheese cake for her. The recipe I was using is Gerd’s. Reading in forums some seems to think it’s the best cheese cake ever. Personally, I’d like the cake to be sweeter, so I would add a sweetener to the base. Also I used 150 grams of butter. Next time I will use less.

The base:

100-150 grams of butter (at room temperature)
250 grams of ground almonds
(As mentioned above I would also add a sweetener)

The filling:

3 dl of cream
3 dl of of sour cream
125 grams of cream cheese
1 pack of sugarfree jelly with half the amount of water (should amount to about 4 dl of liquid)

Blend the ingredients for the base well and press it into a springform to evenly cover the tin.

Make your jelly and let it cool. Mix sour cream with cream cheese until it is smooth. Add whipped cream and jelly to your cheese mix and put it in your refridgerator over night. Cover your base with the mix and put in in the refridgerator over night.

I didn’t calculate this myself, but I read that this bread has less than 1 net carb pr slice if you cut really thin slices.

Here’s what you need:
- 6 large eggs (I used 7 medium sized eggs)
- 300 grams of creme fraiche
- 100 grams of ground almonds
- 100 grams of ground walnuts
- 100 grams of ground safflower seed
- 50 grams of safflower seeds
- 4 tablespoons of psyllium husk fiber
- two handfuls of bran fiber
- 1 teaspoon of salt
- your choice of sweetener (I used 3 teaspoons of erythritol)
- 2-3 teaspoons of baking powder (the original recipe uses yeast, but since there is no flour in this recipe I used baking powder instead)

See the google calculator to translate this recipe to ounces or other measurements.

Mix all ingredients together and put it in two silicone bread pans. Bake it in the oven for 60-70 minutes at 160 degrees C/320 degrees F in an oven with convection. I put the whole mix in one bread pan and put it in the oven at 175 degrees C for 90 minutes (with a baking sheet on top of it for the last 30 minutes), but next time I will try using two bread pans to bake it faster.

Traditionally it is served with boiled potatoes. This dish is very easy to cook and can easily be turned into a great low carb recipe by making it without wheat flour and skipping the potatoes. Some low carbers like to serve fårikål with cauliflower instead of potatoes.

I got this recipe from a friend and just replaced the sugar. Next time I will probably try using a darker chocolate to reduce the amount of sugar and possibly add more sweetener. You can use the egg yolks to make ice cream, use them as a thickener in certain sauces (such as this cream sauce) or add an extra egg yolk to your omelette.

Ingredients:

- 4 egg whites
- 1 dl (1/2 cup) erythritol (or your choice of sweetener)
- 2 dl (3/4-1 cup) shredded coconut
- 75 grams (3 ounces) of shredded dark chocolate (minimum 70% cocoa)

Preheat oven to 180 degrees C (356 F). Stiff beat the egg whites with erythritol. Fold the rest of the ingredients into your egg whites. Bake in the oven for 30-35 minutes.

Make a cake filling by melting 75 gams (3 ounces) of dark chocolate and whipping 1 1/4 cup of cream. Mix chocolate with whipped cream before putting the filling on your cake.

I first saw this recipe posted on a forum and have later read that the recipe comes from the polish doctor Jan Kwasniewski. You can use these cheese breads to make hamburgers, pizza or eating them with a topping.

I made 9 small breads. If you are going to use them for mini pizzas I recommend making them larger.

Ingredients:

3 eggs
80-100 grams (2.8 – 3.5 ounces) shredded cheese
150 grams (5.3 ounces) cottage cheese or philadelphia
spices (I use a mix of basil, oregano and thyme)

Separate the eggs. Mix egg yolks, cottage cheese and spices with a hand blender. Add the shredded cheese.

Stiff beat the egg whites. Carefully fold the egg yolk mix into your stiff beaten egg whites.

Put your cheese breads on an oven pan with a table spoon and put them in the oven for about 20 minutes at 180 degrees C (356 degrees F)

Cauliflower can be used to make a low carb rice replacement. It is not a good replacement in casserole recipes, but is fantastic accompanied with sauce, in a salad or instead of fried rice.

Use one cauliflower head or whatever amount you want. The easiest way to make cauliflower rice is to use a food processor until the cauliflower gets the size of rice. You can also use a cheese grater or chop by hand. Add a bit of salt and sautè the cauliflower in butter or microwave it in a covered dish for about 5 minutes (don’t add any water).
