<p>1 head cauliflower<br />
chicken-flavored bouillon<br />
7 dl (3 cups) of water<br />
3 dl (1 1/3 cup) of heavy cream<br />
Pinch of nutmeg<br />
Salt &amp; pepper<br />
1-2 tablespoons of butter<br />
3 tablespoons of chives</p>
<p>Break the cauliflower into flowerets and cook it in bouillon water until tender. Put cauliflower, water and the rest of the ingredients in a food processor to mash the cauliflower. Put the soup back into the saucepan and heat.</p>
<p>Some alternative ingredients you may like to add to your soup: onion, two tablespoons of lemon juice and 1-2 cloves of garlic.</p>
<p>I personally prefer not to mash the cauliflower and keep pieces of cauliflower in the soup, so I often use <a href="http://www.lowcarbday.com/low-carb-ingredients" target="_blank">locust bean gum</a> to thicken the soup.</p>
