Almond porridge

I thought I had posted the last porridge recipe for a while, but I came across this almond porridge recipe that sounded really tempting, so I had to try it. This wont become one of my personal favorites, so I hesitated posting it, but when searching google for ideas on how to make some changes, people seemed to enjoy almond porridge containing eggs. Here’s a link to what seems to be the original almond porridge version.

Ingredients:
0.5 dl ~ 1/5 cup heavy cream
1 dl ~ 2/5 cup ground almonds
2 eggs
0.5 dl ~1/5 cup water

Heat almonds and cream in a sauce pan. Mix eggs with water. Add egg/water mix to the saucepan and stirr over medium heat until it thickens.

I didn’t add any sweetener to the porridge, but sprinkled some erythritol and cinnamon on top of it. In my opinion the egg taste was too prominent, so if I do use this recipe again, I will probably try to add some stevia, erythritol and cinnamon to the porridge instead of just sprinkling some on top to try to get less egg taste.

Update: I tried modifying this recipe today, but I still don’t like it. It reminds me too much of a cake that hasn’t been fried, but I will leave it here since others like what I don’t.

2/5 cup heavy cream
2/5 cup ground almonds
2 eggs
2/5 cup water
1 tablespoon coconut flour
3 teaspoons erythritol
1 teaspoon cinnamon
10 drops of stevia
1 tablespoon of butter

Hmmm… I tried this today, but I’m not a fan.
Maybe it would taste better if the almonds were blanced? I think the porridge tasted bitter.
