This is a simple cake, so low in carbohydrates you could eat it every day
I prefer to make it with strawberries, but I didn’t have that, so this time I used blueberries. This recipe could be used to make a variety of low carb cakes, for instance cheese cake and cake with butter cream.
Ingredients:
4 egg whites (2 carbs)
200 grams (7 oz) almonds (13.8 carbs)
Sweetener of your choice (I used 10 drops of stevia and 1 tablespoon of erythritol)
2 dl (4/5 cup) cream (5.8 carbs)
25 grams of blueberries (1.9 carbs)
Total carbs: 23.5, 3 carbs pr piece.
Preheat oven to 160 degrees C (320 degrees F)
Ground the almonds with your sweetener. Separate the eggs. Beat the egg whites until they are stiff. Fold the almond mix into your whipped egg whites.
Pour the cake mix in a greased springform and put your cake in the oven for 30-35 minutes.
Decorate your cake with whipped cream and fresh berries.
